Description

It is a wholesome, nutrient-packed dish perfect for a healthy meal or side. This stir-fry combines the slightly bitter yet aromatic sprouted fenugreek (methi) seeds with a vibrant mix of fresh vegetables like bell peppers, carrots, and green beans. Sautéed in minimal oil with spices like cumin, turmeric, and a dash of chili for flavor, the dish balances the bitterness of fenugreek with the sweetness of the vegetables. It’s rich in fiber, vitamins, and antioxidants, making it an excellent choice for promoting digestion, managing blood sugar, and boosting overall health. Ideal for a quick and easy meal!


Ingredients

Scale
  1. 1 cup sprouted fenugreek seeds
  2. 1 teaspoon peanut oil
  3. 1 small onion, chopped
  4. 2 cloves garlic, minced
  5. 1 medium carrot, peeled and grated
  6. 1 medium bell peppers, chopped.
  7. 1/2 cup green beans.
  8. Salt to taste
  9. Fresh coriander leaves, chopped (optional)

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add chopped onion and cook until softened, about 3-4 minutes.
  3. Add minced garlic and cook for 1 minute.
  4. Add grated carrot, chopped bell pepper and green beans. Cook for 4-5 minutes or until the vegetables are tender.
  5. Add sprouted fenugreek seeds and stir-fry for 2-3 minutes.
  6. Garnish with chopped fresh coriander leaves, if desired.
