Description

- ½ cup soya granules (soaked and squeezed)
- 1 cup spinach (finely chopped)
- 1 medium boiled potato (mashed) (or ¼ cup mashed sweet potato for a lower-carb option)
- ¼ cup besan (gram flour) or sattu (roasted gram flour)
- 1 small onion (finely chopped)
- 1 tsp ginger-garlic paste
- 1 green chili (finely chopped) (adjust to taste)
- ½ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp turmeric powder
- ½ tsp red chili powder (optional)
- 1 tbsp lemon juice
- 1 tbsp coriander leaves (chopped)
- Salt to taste
- 1–2 tsp oil for shallow frying
Instructions
Prepare Soya Granules:
- Soak the soya granules in hot water for 10 minutes, then drain and squeeze out excess water.
- Blend coarsely or mash lightly.
Prepare the Mixture:
- In a mixing bowl, combine soya granules, chopped spinach, mashed potato, besan, onion, ginger-garlic paste, green chili, and spices.
- Mix well to form a dough-like consistency. If the mixture feels wet, add more besan/sattu
Shape the Cutlets:
- Divide the mixture into small portions and shape them into round or oval patties.
Cooking the Cutlets:
- Heat a pan with a little oil.
Place the cutlets and cook on medium heat for 3-4 minutes per side until golden brown and crisp.
Serving Suggestions:
- Serve hot with mint chutney or yogurt dip.
