The Apple Pumpkin Quinoa Salad is the perfect seasonal lunch or dinner recipe. It’s packed with hearty ingredients like roasted pumpkin, warm quinoa, and mixed greens making it extra filling and delicious.
Ingredients

- ½ cup cooked quinoa
- ½ cup pumpkin, peeled and cubed
- 1 small apple, diced
- 1 tsp mixed roasted seeds
- 1 cup blanched spinach or mixed greens
- 1 tbsp. chopped coriander leaves
- 1 tsp lemon juice
- 1/4th tsp cayenne pepper
- Salt as per taste
Instructions
- Roast the Pumpkin:
Preheat the oven to 400°F (200°C).Spread the cubed pumpkin on a baking sheet and season with salt and pepper. Roast for about 20-25 minutes, or until tender and slightly caramelized. Let it cool.
- Prepare the Salad:
In a large bowl, combine the cooked quinoa, roasted pumpkin, diced apple and fresh coriander leaves. Add the blanched spinach or mixed greens.
- Add salt, cayenne pepper, mixed roasted seeds & toss. Just before serving, squeeze in lime juice.
Notes
- Other cereals like buckwheat, broken wheat can be used instead of quinoa.
- Pumpkin can be charred on direct flame in place of roasting in oven
