Description

For the chickpea topping:
- 1 cup cooked chickpeas (or canned, rinsed and drained)
- 1 tbsp olive oil
- 1 tsp cumin powder
- 1/4 tsp chili flakes
- 1/4 tsp salt (adjust to taste)
- 1/4 tsp black pepper
For the avocado spread:
- 1 large ripe avocado
- 1 tbsp lemon juice
- 1 small clove garlic, minced
- 1/4 tsp chili flakes (optional)
- Pinch of salt and pepper
For the toast:
- 4 slices of Multigrain bread or sourdough
Toppings (optional):
- Fresh cilantro or parsley, chopped
- Cherry tomatoes, halved
- Sesame seeds
Instructions
Prepare the Chickpea Topping:
- Heat olive oil in a skillet over medium heat.
- Add cooked chickpeas, cumin powder, chili flakes, salt, and pepper.
Make the Avocado Spread:
- Scoop the avocado into a bowl.
- Add lemon juice, minced garlic, chili flakes (if using), salt, and pepper.
- Mash everything together until smooth.
- Sauté for 5-7 minutes until the chickpeas are slightly crispy. Set aside.
Toast the Bread:
- Toast the bread slices in a toaster or on a skillet until golden and crisp.
Assemble the Toast:
- Spread a generous layer of avocado spread on each slice of toast.
- Top with sautéed chickpeas.
Add Optional Toppings:
- Garnish with fresh cilantro or parsley, cherry tomatoes, microgreens, or seeds for extra flavor and crunch.
