Baked Gujiyas

Description

Gujiya and Holi are just two different names of  ‘Happiness’. Holi is the Indian festival of colours to celebrate and welcome spring which also represents colour and youth by the way.

Who wants to double up their happiness by indulging in healthy baked version of gujiyas. If you are one of them, kindly have a look at this recipe.


Ingredients

For the dough:

  1. 1 cup whole wheat flour
  2. 2 tbsp semolina
  3. 1 tbsp ghee (clarified butter)
  4. ¼ cup warm milk or water (adjust as needed)
  5. A pinch of salt

For the filling:

½ cup dry milk powder mixed with a little milk

  1. ¼ cup desiccated coconut
  2. ¼ cup chopped nuts (almonds, cashews, pistachios)
  3. ¼ cup jaggery powder or powdered dates (for natural sweetness)
  4. ½ tsp cardamom powder
  5. 1 tbsp raisins (optional)

Instructions

Prepare the dough

1. In a bowl, mix whole wheat flour, semolina, and a pinch of salt.

2. Add ghee and rub it into the flour with your fingers until it resembles breadcrumbs.

3. Gradually add warm milk/water and knead into a firm dough. Cover and let it rest for 30 minutes.

 

Prepare the filling

1. Mix dry milk powder with little milk with desiccated coconut, chopped nuts, jaggery, cardamom powder, and raisins (if using). Set aside.

 

Shape the gujiyas

1. Preheat the oven to 180°C (350°F).

2. Divide the dough into small balls and roll them into thin circles (about 4-inch diameter).

3. Place 1-2 tsp of filling in the center.

4. Fold the circle into a half-moon shape and seal the edges by pressing firmly or using a fork.

 

Bake the gujiyas

1. Place the gujiyas on a baking tray lined with parchment paper.

2. Lightly brush them with milk or ghee for a golden finish.

3. Bake for 20-25 minutes or until golden brown, flipping halfway for even baking.

4. Let the gujiyas cool slightly before serving. You can store them in an airtight container for up to a week.


Notes

1. Variations: You can add moong dal to the filling mixture by roasting and coarsely grinding first.

2. If you use refined flour, can add 1 tbsp of it to the dough for extra lightness.
