Description
Tender chicken is cooked with vegetables and herbs in a savory broth, an easy and time saving recipe which is power packed with nutrients!
Ingredients
- Chicken – 100g
- Celery- 1 stalk chopped
- Carrots- 1 diced
- Tomatoes- 1 diced
- Onions- 1 diced
- Yellow bell pepper- 1 diced
- Peas – 1/2 cup
- Chicken broth- as per requirement
- Garlic- 1 tbsp minced
- Oil – 1tsp
- Bayleaf- 1
- Black pepper powder-1 tsp
- Salt as per taste
- Coriander leaves – For garnishing
Instructions
- Cut the chicken into bite sized pieces.
- Heat oil in a pan, add chicken pieces & sauté it.
- Add onions & garlic and sauté for more 2-3 minutes.
- Add in diced carrots, yellow bell pepper, onions, tomatoes, peas, chicken broth, bay leaf, black pepper powder, salt and let it simmer for 5 minutes.
- Now cover & cook till chicken is done.
- Garnish it with coriander leaves
Notes
- You can add other vegetables or ingredients to the stew like pumpkin, sweet potatoes, red & green bell pepper, mushrooms, or corn.
- You can also use Italian seasoning or any other seasoning as per your taste.
- Leftovers can be stored in airtight container for up to 4 days. Reheat before serving.
