  1. ⅓ cup coconut milk
  2. 1 tablespoon chia seeds
  3.  1 tsp dates paste
  4. 1 small banana
  5. Choice of berries (2 tbsp)
  6. 1 teaspoon sliced almonds & roasted pumpkin seeds

Instructions:

  • In a small bowl or jar, mix together the coconut milk, chia seeds and dates paste.
  • Stir the mixture well to ensure the chia seeds are evenly distributed. Cover and refrigerate for at least 1-2 hours, or overnight. Stir the pudding once or twice during the first hour if possible to help distribute the chia seeds.
  • While the pudding is chilling, prepare your chosen fruits and seeds. Wash, peel, and chop the fruit into bite-sized pieces.
  • After the pudding has thickened, give it a good stir. Top with your prepared fruits and seeds.
