Description

A light, tangy, and refreshing dish made with cooked millets, tempered spices, and fresh lemon juice. This healthier twist on traditional lemon rice is rich in fiber, easy to digest, and perfect for a balanced meal.


Ingredients

  • Cooked millet (foxtail/little millet) – 1 cup
  • Oil – 1 tsp
  • Mustard seeds – ½ tsp
  • Urad dal – 1 tsp
  • Chana dal – 1 tsp
  • Peanuts – 1 tbsp
  • Curry leaves – 6–8
  • Green chili – 1 (slit)
  • Turmeric powder – ¼ tsp
  • Lemon juice – 1–1.5 tbsp
  • Salt – to taste
  • Coriander leaves – 1 tbsp (chopped)

Instructions

  • Heat oil in a pan, add mustard seeds and let them splutter.
  • Add urad dal, chana dal, and peanuts; sauté until golden.
  • Add curry leaves and green chili; sauté briefly.
  • Add turmeric and mix well.
  • Add cooked millet and salt; mix gently.
  • Turn off heat, add lemon juice, and mix well.
  • Garnish with coriander leaves and serve warm.
