- ½ cup Kodo millet (soaked for 30 minutes)
- 1 tbsp oil or ghee
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tsp urad dal (optional)
- 1 small onion, chopped
- 1 small carrot, diced
- ½ cup green beans, chopped
- ½ cup peas (fresh or frozen)
- 1 green chili, chopped
- A few curry leaves
- 1 tsp grated ginger
- 1½ cups water
- Salt to taste
- Fresh coriander for garnish
- 1 tsp lemon juice (optional)
Instructions
- Heat oil or ghee in a pan. Add mustard seeds, and when they splutter, add cumin seeds and urad dal. Sauté until golden brown.
- Add curry leaves, green chili, ginger, and onions. Cook until onions turn translucent.
- Add the diced carrot, beans, and peas. Stir and cook for 3-4 minutes until slightly tender.
- Drain the soaked Kodo millet and add to the pan. Stir for 2 minutes.
- Add water and salt, bring it to a boil. Lower the heat, cover, and let it cook for 10-12 minutes or until the millet is fully cooked and water is absorbed.
- Turn off the heat, stir in lemon juice (optional), and garnish with fresh coriander.
- Serve hot.
