Description

Mixed Vegetable Kodo Millet Upma is a wholesome and nutritious dish perfect for a healthy meal. Ingredients

  • ½ cup Kodo millet (soaked for 30 minutes)
  • 1 tbsp oil or ghee
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 tsp urad dal (optional)
  • 1 small onion, chopped
  • 1 small carrot, diced
  • ½ cup green beans, chopped
  • ½ cup peas (fresh or frozen)
  • 1 green chili, chopped
  • A few curry leaves
  • 1 tsp grated ginger
  • 1½ cups water
  • Salt to taste
  • Fresh coriander for garnish
  • 1 tsp lemon juice (optional)

Instructions

  • Heat oil or ghee in a pan. Add mustard seeds, and when they splutter, add cumin seeds and urad dal. Sauté until golden brown.
  • Add curry leaves, green chili, ginger, and onions. Cook until onions turn translucent.
  • Add the diced carrot, beans, and peas. Stir and cook for 3-4 minutes until slightly tender.
  • Drain the soaked Kodo millet and add to the pan. Stir for 2 minutes.
  • Add water and salt, bring it to a boil. Lower the heat, cover, and let it cook for 10-12 minutes or until the millet is fully cooked and water is absorbed.
  • Turn off the heat, stir in lemon juice (optional), and garnish with fresh coriander.
  • Serve hot.
