Description

Mixed vegetable uttapam is a nutritious and delicious South Indian dish made with fermented rice and lentil batter, topped with colorful vegetables. It is rich in fiber, protein, and essential vitamins, making it a great choice for a healthy breakfast or light meal. The fermentation process enhances gut health, while the vegetables add antioxidants and micronutrients.


Ingredients

  • 1 cup idli/dosa batter (fermented)
  • ¼ cup onion (finely chopped)
  • ¼ cup tomato (finely chopped)
  • ¼ cup capsicum (finely chopped)
  • ¼ cup carrot (grated)
  • 2 tbsp coriander leaves (chopped)
  • 1 green chili (finely chopped, optional)
  • ½ tsp cumin seeds
  • ½ tsp salt (or as needed)
  • 1 tsp oil/ghee for cooking

Instructions

  1. Preheat a tawa (griddle) on medium heat and lightly grease it with oil or ghee.
  2. Pour a ladle of idli/dosa batter onto the tawa and spread it slightly (keep it thick like a pancake).
  3. Sprinkle the chopped vegetables evenly over the uttapam.
  4. Press the toppings gently with a spatula so they stick to the batter.
  5. Drizzle a few drops of oil around the edges and cook on low-medium heat for 2-3 minutes.
  6. Flip carefully and cook the other side for another 1-2 minutes until golden brown.
  7. Remove from the tawa and serve hot with coconut chutney or sambar.

Notes

This low-calorie, high-fiber uttapam is an excellent meal for weight management and digestion.
