Description

Soya Spinach Cutlets are a delightful and nutritious Indian snack that combines the rich protein content of soya granules with the iron-rich goodness of spinach. These cutlets are seasoned with aromatic herbs and spices, offering a flavorful experience that’s both healthy and satisfying. Ingredients

  • ½ cup soya granules (soaked and squeezed)
  • 1 cup spinach (finely chopped)
  • 1 medium boiled potato (mashed) (or ¼ cup mashed sweet potato for a lower-carb option)
  • ¼ cup besan (gram flour) or sattu (roasted gram flour)
  • 1 small onion (finely chopped)
  • 1 tsp ginger-garlic paste
  • 1 green chili (finely chopped) (adjust to taste)
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp turmeric powder
  • ½ tsp red chili powder (optional)
  • 1 tbsp lemon juice
  • 1 tbsp coriander leaves (chopped)
  • Salt to taste
  • 12 tsp oil for shallow frying

Instructions

Prepare Soya Granules:

  • Soak the soya granules in hot water for 10 minutes, then drain and squeeze out excess water.
  • Blend coarsely or mash lightly.

Prepare the Mixture:

  • In a mixing bowl, combine soya granules, chopped spinach, mashed potato, besan, onion, ginger-garlic paste, green chili, and spices.
  • Mix well to form a dough-like consistency. If the mixture feels wet, add more besan/sattu

Shape the Cutlets:

  • Divide the mixture into small portions and shape them into round or oval patties.

Cooking the Cutlets:

  • Heat a pan with a little oil.

Place the cutlets and cook on medium heat for 3-4 minutes per side until golden brown and crisp.

Serving Suggestions:

  • Serve hot with mint chutney or yogurt dip.
