Ingredients
- Egg – 1 whole
- Egg white – 1
- Spinach (finely chopped) – 2 tbsp (lightly sautéed)
- Mushroom (chopped) – 2 tbsp
- Onion (finely chopped) – 1 tbsp
- Garlic (minced) – 1 small clove
- Olive oil – ½ tsp
- Black pepper – to taste
- Salt – a pinch
Instructions
- Preheat oven to 180°C. Grease 2 muffin cups lightly.
- Heat oil, sauté garlic + onion till soft.
- Add mushrooms, cook till water evaporates.
- Add spinach, cook briefly and cool slightly.
- Whisk egg + egg white with pepper and salt.
- Mix in sautéed veggies.
- Pour into muffin cups and bake for 12–15 minutes until set.
