Description

Fluffy, protein-packed Spinach & Mushroom Egg Muffins made with sautéed vegetables, eggs, and simple seasonings—perfect for a quick, healthy breakfast or snack. These muffins are low in carbs, easy to make, and great for meal prep, keeping you full and energized throughout the day.


Ingredients

  • Egg – 1 whole
  • Egg white – 1
  • Spinach (finely chopped) – 2 tbsp (lightly sautéed)
  • Mushroom (chopped) – 2 tbsp
  • Onion (finely chopped) – 1 tbsp
  • Garlic (minced) – 1 small clove
  • Olive oil – ½ tsp
  • Black pepper – to taste
  • Salt – a pinch

Instructions

  • Preheat oven to 180°C. Grease 2 muffin cups lightly.
  • Heat oil, sauté garlic + onion till soft.
  • Add mushrooms, cook till water evaporates.
  • Add spinach, cook briefly and cool slightly.
  • Whisk egg + egg white with pepper and salt.
  • Mix in sautéed veggies.
  • Pour into muffin cups and bake for 12–15 minutes until set.
