Description

A light, soothing, and protein-rich soup made with bottle gourd and yellow moong dal. It is easy to digest, low in calories, and suitable for a healthy dinner, detox meal, or weight-loss-friendly diet plan.


Ingredients

  • Lauki/bottle gourd: 1 cup, peeled and chopped
  • Yellow moong dal: 2 tbsp, washed
  • Ginger: ½ tsp, grated
  • Cumin seeds: ½ tsp
  • Black pepper: ¼ tsp
  • Turmeric: a pinch
  • Salt: as per taste
  • Water: 2 cups
  • Ghee or oil: ½ tsp, optional
  • Lemon juice: ½ tsp, optional
  • Fresh coriander: for garnish

Instructions

  • Wash the moong dal and chop the lauki.
  • In a pressure cooker, add lauki, moong dal, ginger, turmeric, salt, and water.
  • Cook for 2 to 3 whistles until soft.
  • Let it cool slightly, then blend until smooth.
  • In a pan, heat ghee or oil and add cumin seeds.
  • Pour the blended soup into the pan and simmer for 3 to 4 minutes.
  • Add black pepper and lemon juice.
  • Garnish with coriander and serve warm.
