Description
A light, soothing, and protein-rich soup made with bottle gourd and yellow moong dal. It is easy to digest, low in calories, and suitable for a healthy dinner, detox meal, or weight-loss-friendly diet plan.
Ingredients
- Lauki/bottle gourd: 1 cup, peeled and chopped
- Yellow moong dal: 2 tbsp, washed
- Ginger: ½ tsp, grated
- Cumin seeds: ½ tsp
- Black pepper: ¼ tsp
- Turmeric: a pinch
- Salt: as per taste
- Water: 2 cups
- Ghee or oil: ½ tsp, optional
- Lemon juice: ½ tsp, optional
- Fresh coriander: for garnish
Instructions
- Wash the moong dal and chop the lauki.
- In a pressure cooker, add lauki, moong dal, ginger, turmeric, salt, and water.
- Cook for 2 to 3 whistles until soft.
- Let it cool slightly, then blend until smooth.
- In a pan, heat ghee or oil and add cumin seeds.
- Pour the blended soup into the pan and simmer for 3 to 4 minutes.
- Add black pepper and lemon juice.
- Garnish with coriander and serve warm.
