Description

Light, packed with protein, and a breeze to whip up, this Paneer and Broccoli Frittata is the ideal go-to meal when you’re craving something satisfying yet not too heavy.


Ingredients

  • Paneer (low-fat) – 50g (crumbled)
  • Broccoli – ½ cup (finely chopped, lightly steamed)
  • Egg whites – 2
  • Onion – 2 tbsp (finely chopped)
  • Garlic – 1 clove (minced)
  • Olive oil – 1 tsp
  • Black pepper – ¼ tsp
  • Salt – to taste
  • Chili flakes / oregano – pinch
  • Fresh coriander – for garnish

Instructions

  • Heat olive oil in a non-stick pan.
  • Add garlic and onion sauté lightly.
  • Add broccoli cook 2–3 mins.
  • Add crumbled paneer mix it gently.
  • In a bowl, whisk egg whites, salt and pepper.
  • Pour mixture into pan spread evenly.
  • Cover and cook on low flame for 6–8 mins (or bake at 180°C for 10 mins).
  • Flip (optional) or cook till set.
  • Garnish with herbs & serve warm.
