Light, packed with protein, and a breeze to whip up, this Paneer and Broccoli Frittata is the ideal go-to meal when you’re craving something satisfying yet not too heavy.
Ingredients
- Paneer (low-fat) – 50g (crumbled)
- Broccoli – ½ cup (finely chopped, lightly steamed)
- Egg whites – 2
- Onion – 2 tbsp (finely chopped)
- Garlic – 1 clove (minced)
- Olive oil – 1 tsp
- Black pepper – ¼ tsp
- Salt – to taste
- Chili flakes / oregano – pinch
- Fresh coriander – for garnish
Instructions
- Heat olive oil in a non-stick pan.
- Add garlic and onion sauté lightly.
- Add broccoli cook 2–3 mins.
- Add crumbled paneer mix it gently.
- In a bowl, whisk egg whites, salt and pepper.
- Pour mixture into pan spread evenly.
- Cover and cook on low flame for 6–8 mins (or bake at 180°C for 10 mins).
- Flip (optional) or cook till set.
- Garnish with herbs & serve warm.
